Preservation Pub on Market Square is considering roof-top space.
Coming soon to a Market Square roof near you? Tomatoes, peppers and a solar-panel awning, maybe.
The folks at Preservation Pub are moving forward on a rooftop space for their building at 28 Market Square, although it will probably be mostly invisible from the ground. Bernadette West said Tuesday that the idea is to build an outdoor seating area for 49 people, along with a garden to grow herbs and vegetables for the pub food.
The pub is hoping to add a kitchen in its second floor, and West said the idea is to offer food including panini sandwiches, pizzas (she specifically mentioned a Guinness-crust pizza!) and dipping sauces for baked fries.
